Friday Finds! (on Saturday) and MYBT Week-in-Review

I know I’m a day late in posting this week’s Friday Finds! but honestly time got away from me yesterday and I completely forgot to write a blog post until about 11 pm and by that point I was way too tired. I’m going to use the fact that I didn’t get home from Tokyo until 3 am the night before as my excuse—and the fact that my husband had the day off from work :) .

I hope you’re all enjoying your long weekend so far. It’s been overcast with the threat of rain all day in Okinawa, but that’s fine with me because I feel like I’ve been going non-stop for the past month (ever since I got back to Okinawa after my month-long trip to the States). It’s nice to have a weekend when the weather isn’t that great because it allows me to be lazy and not feel guilty about not being outside.

Overcast weather is also a great excuse to bake! So far today I’ve baked homemade bread, muffins for this week’s Muffin Monday, and made some homemade Bailey’s Irish Cream, which I cannot wait to try!

Kale Red Pepper Pesto (from Eating Rules) I love pesto and have recently started making different variations of it. I can’t wait to try this pesto because kale is packed with nutrients.

Spinach Salad with Sweet Potatoes and Maple Vinaigrette (from Apple a Day) I love a good spinach salad, especially as an entrée, so this salad looks like it is right up my alley. Plus I love that it incorporates fall flavors.

Potato Cumin Curry (from In the Kitchen with Kath) I’m a sucker for curry and we are very spoiled to have some amazing curry places right near our house. I know I’m going to miss them when we leave Okinawa so I’m trying to stockpile some good curry recipes for the future—this one definitely looks like a winner.

Chicken Fat Fried Potatoes (from The Amateur Gourmet) Don’t be fooled by the name of this blog post. I know it sounds super unhealthy, but it’s actually a very natural dinner—the potatoes are simply roasted underneath the chicken so they are cooked and flavored by the drippings. It sounds really simple and very delicious!

Self-Frosting Pumpkin Nutella Muffins (from Phenomenon) I have read a few recipes for “self-frosting” muffins/cupcakes, but have yet to try them. Since these muffins combine two of my favorite ingredients—pumpkin and nutella—they just might be the first self-frosting muffins I try. I’ll let you know how they turn out.

Pumpkin Chocolate Chip Cookie Pie (from How Sweet It Is) Pumpkin and chocolate chip cookies all in one place? Need I say more?! I cannot wait to try this :) .

As you know, on Saturdays I usually post the best things I ate this week. I ate a lot of delicious things this week in Tokyo, but my cousin is going to do a guest post for me about all the yummy things she had in Japan so we’ll save those for next week.
