64 Ideas for Using Pumpkin this Fall!

I love love love pumpkin and get so excited when fall rolls around every year because it means I can start cooking with pumpkin again. I know there aren’t any rules saying that I can’t cook with pumpkin at other times of the year, but there is just something about pumpkin and the fall that goes together so well. Pumpkin makes me think of cool autumn days while growing up in New England. It reminds me of apple picking, apple cider, Halloween, Thanksgiving, and cozy nights sitting around the fire.

Even though I live in tropical Okinawa now, the fall still makes me think of cool fall days in New England and it still makes me want to do lots of cooking and baking with pumpkin. I always bookmark a ton of pumpkin recipes every year, but never end up making very many of them because I save them in random places and then forget about them. So this year I decided it would be fun to make a giant list of pumpkin recipes and share them all with you in the hopes that you love pumpkin as much as I do!

Hopefully there isn’t another shortage on pumpkin this year like there was last year. We almost had to have Thanksgiving without pumpkin! Luckily, my mom pulled through and sent us a few cans of pumpkin. When they finally had them at the commissary again, I quickly called my friend and asked how many cans she wanted. I think I bought 8 cans for the two of us!

Non-Dairy Pumpkin “Ice Cream”
*This “ice cream” is the same method as the banana cream freeze I posted about last week. It is some of the creamiest and best pumpkin ice cream I’ve ever had! Next time I’d like to try making it with pumpkin puree rather than the pumpkin pie filling, but that is all I had on hand.

Ingredients
2 bananas, frozen and cut into thick slices
1 tsp vanilla
1/2 tsp cinnamon
1-2 tbsp almond or coconut milk
2 tbsp unsweetened coconut
2 tbsp pumpkin pie filling

Directions
Put everything in the food processor and let ‘er rip until creamy.
