This week has flown by. I’m not sure if I’m still in a time warp from the typhoon—when it was too loud to sleep and I stayed up way too late—or if it’s because I’m trying to get back to the States for a wedding, but I can’t believe it’s already Friday! I’m flying standby, which is such a headache while you’re trying to catch a flight, but always well worth it once you get back for free. Hopefully by the time you’re reading this I am either in the air, or already back home

I’m super excited to go home because Amanda’s sister, Sara, is getting married!!! Sara is like a little sister to me. I remember going to the hospital the day she was born, but I wasn’t allowed in to see her because I was too young. I have so many great memories with Sara over the years and I am honored to be in her wedding. (It’s the first time I’ve been in any wedding besides my own so I’m super excited!) I promise to post some pictures after it’s over.

It was hard to choose which recipes to share with you this week because I bookmarked A LOT of recipes. Do you want to know why? I joined Pinterest. That’s right, I finally caved in and joined the newest trend and let me tell you, I am HOOKED. I have to restrain myself from going to the website because I know I’ll spend way too much time looking at it when I’m supposed to be editing my thesis!

Spinach Pesto Grilled Cheese Sandwich (from Closet Cooking) Who doesn’t love a dressed up grilled cheese sandwich? This looks really easy to prepare and soooo yummy!
Zucchini Cakes (from Life’s Ambrosia) My parents grow a lot of zucchini so I always look for good ways to use zucchini in the summertime. These look delish!
Broiled Asiago Heirloom Tomatoes (from How Sweet It Is) What a great use for tomatoes from the garden this summer! So simple yet they look so elegant and delicious.
Two-Ingredient Ice Cream (from Brown Eyed Baker) This looks so fun! As you know from my post on lemon ice cream, I LOVE homemade ice cream. This is a fun and easy way for anyone to make homemade ice cream even if you don’t have an ice cream maker! And you can add whatever mix-ins you want!
The Best No Bake Lemon Cheesecake (from Mel’s Kitchen Café) I seem to be posting a lot of desserts this week….I guess my brain knows that I only have 9 more days of my no sugar challenge! Plus lemons are such a refreshing summer treat and anything that doesn’t require turning on the oven has me sold.

Just a heads up, if I don’t post for a couple of days it is not because I don’t love you guys—it is only because I’m busy with the wedding and finishing up my thesis. I only have three weeks left of grad school and then I’ll have my Master’s Degree! I have tried to schedule blog posts in advance so I don’t leave you stranded, but in case I miss a few days now you know why.
