The Best Things I Ate This Week

My husband was gone most of this week so I haven’t been cooking much. I rarely cook when he is gone. I don’t know why. I think it’s just because it is much more fun to cook for both of us. I love sitting down and enjoying a meal together, but when I’m by myself it seems like way too much trouble to cook for just me. So I usually eat a lot of leftovers—and oatmeal :) .

This week I was lucky enough to get invited over to my friend’s house for dinner for homemade lasagna. Lasagna is one of those foods that I really love, but rarely ever make so I was really excited for it and it did not disappoint. Plus, I love spending time with John and Sara and their daughter Elizabeth so it was a great night.

Sara's delicious lasagna!

The other two things I am going to share with you are treats that Lindsay and I made during our marathon typhoon party. The typhoon lasted for a long time, but luckily Lindsay didn’t lose power or water so we had plenty of time to play around in the kitchen :) . We made a couple of the recipes that I shared in the 15 Ideas for a Typhoon Party post on Wednesday and they were both delish!!

Mama Pea's Cinnamon Apricot Almond Hummus

Oil-free Zucchini Walnut Bread

As I have mentioned in past weeks, I would love for others to participate in The Best Things I Ate This Week so please send in your pictures! Two of my blogger friends sent in pictures this week–thanks Junia and Alex!

Junia from Mis Pensamientos sent in a picture of a quick, and healthy snack she loves:

Frozen Grapes

Frozen Blueberries

Alex from Yums and Loves sent in a picture of Baked Eggs with Potatoes and Bacon–an excellent breakfast that she made this week and LOVED!

If you would like to participate in future “The Best Things I Ate This Week” posts, please send a picture and a description of the food to mindyourbeesandtrees (at) gmail (dot) com. You don’t have to have a blog to participate!

Question: What is the best thing you ate this week?
